After missing a vintage, the team has again created this distinctive wine dedicated to a distinguished gentleman, Mark’s late father who gave him the opportunities in life and encouragement to create Lindhorst Wines.
| Harvest: |
The grapes for this wine were sourced from 3 different blocks including some from our innovative Smart Dyson trellising system that is producing truly amazing Shiraz. The Merlot is from a cool South East facing vineyard. The grapes were harvested early in the morning, brought to the cellar and further cooled down to 14ºC skin temperature.

| Vinification: |
A large whole berries component was allowed to pass through the crusher. Alcoholic fermentation was done with regular pump-overs, tapering off to one a day towards the end. After malolactic fermentation in barrel, maturation was done in French 225L Barriques for 22 months. |

| Tasting Notes: |
A classic shiraz nose with loads of bright juicy black fruit. Some white pepper all spice notes. Fruit follow through on the palate with a spicy finish. The wine has a long fresh finish that lingers. This vintage follows its 2003 predecessor as an original exciting New World style wine that already has a silky finish. Drink fresh now or within 5 years. (Tasted August 2007). |
| Food Recommendations: |
Slow roasted lamb shanks, venison with red berry sauce, grilled steak or gourmet burgers, mild Indian curries, winter warming soups |
