We produce a range of red wines including Shiraz, Merlot, Cabernet Sauvignon and a small amount of the South African varietal, Pinotage.Farm manager and in-house winemaker, Ernie Wilken seeks advice from renowned viticulturalist Kevin Watt and consultant winemaker, Cathy Marshall. Grapes are hand-picked and yields are deliberately low to ensure quality. After careful assessments to establish the exact ripeness required from the grapes, they are harvested in the cool early hours of the morning. Internal grape temperature can be dropped further or maintained in refrigerated storage facilities. |
